Due
to the fact that food is necessary for human
survival, food preservation is one of our
oldest technologies. Chef Nicholas
Appert of France developed canning in glass
jars in 1795. In hopes of winning a monetary
prize offered by Napoleon for a way to prevent
military food supplies from spoiling, Appert
discovered that food sealed in glass bottles
under heat was an effective method of preserving
food. During the 1800s, canning techniques
and equipment were largely improved, providing
people a way to store food for long periods
of time. What was originally a French military
secret soon became commonplace. |

With
the emergence of commercially canned foods,
fewer people relied on home canning. Because
of the convenience, variety and availability
of commercially canned foods as homemakers
entered the workforce, home canning became
somewhat of a lost art a few decades ago.
Fortunately,
home canning is making a comeback. Today,
people who either want to get more out of
their home gardens, or are concerned about
the health issues regarding chemical additives
in commercially canned foods, are returning
to home canning. Many others who simply
